Jonah Crab Rolls

Ingredients

  • ¼ cup mayonnaise
  • ½ tsp grated lemon zest
  • ½ tbsp lemon juice
  • 4 drops hot sauce (optional)
  • ½ tsp Old Bay seasoning (or salt and black pepper to taste)
  • 1 tbsp shallot, finely chopped
  • ½ tsp chives (fresh or freeze-dried)
  • ¼ cup celery, finely chopped
  • 8 oz jumbo lump Jonah crab meat, drained
  • 2 top-sliced hot dog buns (or New England-style buns if available)
  • Chopped Italian parsley, fresh chives, or fresh dill for garnish
  • Sprinkle of Old Bay for garnish (optional)

Instructions

  1. Prepare the Dressing:
    In a medium bowl, mix the mayonnaise, lemon zest, lemon juice, hot sauce, Old Bay seasoning, shallots, chives, and celery until well combined.

  2. Fold in the Crab Meat:
    Gently fold in the Jonah crab meat, being careful not to break up the lumps too much. Mix until the crab is evenly coated with the dressing.

  3. Toast the Buns:
    Lightly butter the hot dog buns and toast them in a skillet over medium heat until golden brown and slightly crispy.

  4. Assemble the Rolls:
    Divide the crab mixture evenly between the toasted buns.

  5. Garnish and Serve:
    Sprinkle with fresh parsley, chives, or dill, and add a dash of Old Bay seasoning if desired.

  6. Enjoy!
    Serve immediately with chips, coleslaw, or a crisp salad.
