New England Lobster Roll

Ingredients:

  • 1 pound cooked lobster meat (freshly cooked and picked, or frozen and thawed)
  • 1/4 cup mayonnaise
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon Old Bay seasoning (or your favorite seafood seasoning)
  • Salt and freshly ground black pepper, to taste
  • 4 split-top hot dog buns
  • Chopped fresh chives or parsley for garnish (optional)
  • Lemon wedges, for serving

Instructions

  1. Prepare the Lobster Meat: If you have fresh lobster, cook it according to your preferred method (boiling, steaming, or grilling). Once cooked, remove the meat from the shells and chop it into bite-sized pieces. 

  2. Create the Lobster Salad: In a bowl, combine the mayonnaise, melted butter, freshly squeezed lemon juice, and Old Bay seasoning. Mix well until you have a smooth and creamy dressing.

  3. Mix Lobster with Dressing: Add the chopped lobster meat to the dressing and gently toss until the lobster is well coated. Be careful not to break up the lobster meat too much.

  4. Season and Chill: Season the lobster salad with salt and freshly ground black pepper to taste. Cover the bowl with plastic wrap and refrigerate for about 15-20 minutes to allow the flavors to meld.

  5. Prepare the Hot Dog Buns: In a separate skillet or griddle, melt a small amount of butter over medium heat. Place the split-top hot dog buns on the skillet, inside down, and toast them until they become lightly golden and slightly crispy.

  6. Assemble the Lobster Rolls: Spoon the chilled lobster salad into the toasted hot dog buns, generously filling each one. If desired, garnish with chopped fresh chives or parsley.

  7. Serve and Enjoy: Serve the New England Lobster Rolls immediately, accompanied by lemon wedges on the side for squeezing over the lobster salad.
